Berserk is definitely excellent. If your aware that it is unfinished, the ending of the 25 episodes will be less painful. The animation isnt the best, but the quality of everything else is astounding.
Trinity Blood is ok, worth watching though.
Romance: Chobits (if you consider that romance, is quite good)
Comedy: School Rumble (on my to watch list), Great Teacher Onizuka
Action/adventure: The Twelve Kingdoms, The Law of Ueki
Horror: Monster
Its really hard to make recommendations when we dont know what you have seen. Could you please provide a list of the anime you have already seen, therefore I could probably give you some good recommendations. I have a ton of anime on reserve at this point (33 series, totalling over 150 GB), so some of my suggestions could include anime I havent seen yet. I have too many on reserve

Sailor Moon is supposed to be the premium magical girl anime along with Card Captor Sakura. I guess it would be considered a chic show.

Clamp are known to recycle ideas and characters. They made Card Captor Sakura and Tsubasa Chronicle, so according to trends, you will see some CCS in Tsubasa.
Its kind of embarrassing to admit, but I found the episodes of CCS that I watched rather enjoyable. Its kind of got an atmosphere to it which makes it truly unique.

yeah Death Note is okay. Elfin Lied is great if you actually get the storyline but most guys who watch it are pervs -_-. Ghost Hunt is good but short.

Ghost Hunt has been fabulous so far. I am 12 episodes in, and I am just getting more hooked by the second. Not much of a background story, but damn is it interesting. Its not like most anime where you are just waiting for the good part to come.
Elfen Lied flat out sucks. Its not pervy, bloody, etc. It is boring. Everyone loves it, critiques love it, but I have no idea why.

Elfin Lied has deeper meaning like the lose of innocence with the nudity etc. Why they mixed it with like alien breeds I dont know.
Yeah Ghost Hunt only has like 2-3 more episodes until you are finished eternalmetal i believe

Ghost Hunt has 25 episodes. i am hoping they arent repeats

Im sure Elfen Lied had a "deep" meaning to it, but if I wanted a life lesson, I would have read a book. It was almost like a slice of life anime at it's worst. Thats just the way I felt when watching it.

Pffft, I recommend Elfen Lied. Just finished it, the ending sucks to some extent, but there was a massive suspense behind it.

I liked D.N.Angel also, but i reallly liked the get backers , they have 2 seasons ,and even more manga.

I highly recommend Trinity Blood, I dont know if anyone already recommended it. I dont see why people say it is bloody. There is hardly any blood sadly =( but it is highly good but ended abruptly since the creator died of a heart attack, i believe that is what it was. It is funny, action, a bit of romance if you could tell, sadness and revenge.

Heh, I dont really agree with your age ratings. Outlaw Star, Bleach, and Wolf's Rain have nothing objectionable for the average 12 year old. Aside from sexual innuendo, I dont see a point to say you should be 15+ to watch any of these shows. A 12 year old understands the idea of flirting, and shouldnt be afraid of interaction with the opposite sex. Nothing in those 3 anime even hint at a sexual act; peeking is completely harmless.
The only reason why I could see age ratings on anime (and not hentai) would be because of the intricacies of plot/character development, but I know some 20 year olds who would have a tough time understanding the ideas presented in Wolf's Rain, and some 13 year olds who could comprehend most of it.
The age of maturity/puberty is different in all people. Assigning ages for entertainment is ridiculous, unless controversial issues like drugs and sexual acts are present. But to be honest, the percentage of 15 year olds who have already engaged in a sexual acts is surprisingly high. Kids are definitely aware of these issues and face them almost everyday. More experience thinking about such issues could have positive effects on his cognitive decision making.
